Falooda is a traditional cold drink and dessert popular in the India, Pakistan and Bangladesh.
Traditionally it is made from mixing rose syrup, vermicelli, or basil seeds, with milk or water. its consistency is similar to a milkshake or smoothie. Making falooda is very easy to make.

Serves: 4 Servings
Faloods sev – 3/4 cup (recipe below)
Basil seeds or sabja or chia seeds – 1 tbsp (soaked a cup of water for an hour)
Rabdi – 1 cup (recipe below)
Vanilla ice cream – 1/2 pint (or 1 scoop for each cup)
Toasted nuts for garnishing (optional)
Ingredient for rabdi
3 cups Milk
pistachio and almonds sliced
2-3 drops of kewra water
4-5 tbs sweet condensed milk
Preparation of rabdi
1Boil 3 cups of milk over medium heat in a pan.
2Lower the heat and let the milk reduce to 1/3 rd of the quantity stirring frequently.
3Add condensed milk little at a time and check for sweet and add more if needed finally add kewra water, pistachio and almonds stir . let it cool down on the side.
1Boil the sev or vermicelli take a bowl filled with ice and cold water Press and squeeze the sev into the cold water and let it sit there till you use it for the falooda.
Fill serving glasses in the following order:
1Add some falooda sev or noodles which serves as the bottom layer.
2Add 2 to 3 tbsp of rabdi on top. Add a tsp or 2 tsp of roohafza
3 depending on how strong you like the flavor.
4Add 2 tbsp of soaked basil seeds or subja and a scoop of vanilla ice cream.
5Add a few drops of roohafza on top. Garnish with toasted nuts.
